Ingredients

Brinjals : 150 gm
Mustard seeds
: a few
Curry leaves
: 1 leaf
Garlic
: a few
Vinegar : 1tsp
Tamarind
: a few
Onions : ½ of a small
onion
Cinnamon stick : 1 no
Coriander powder
: 1 tsp
Dry chilli : a few
Sugar
: ½ tsp
Cumin powder
: ¼ tsp
Turmeric
powder : a pinch
Salt
: to taste
Coconut
milk
: 1 cup
Instructions
Slice the brinjals length wise and rub over with
turmeric
and
salt
.
Grind together
red chillies
,
mustard seeds
and cinnamon stick.
Soak
tamarind
in
water
.
Heat
oil
. Fry brinjals .
Boil together fried brinjals, ground spices, vinegar,
turmeric
,
curry leaves
, cumin and
coriander powder
. Add
tamarind
water
also.
To this add
coconut
milk
.
Simmer till brinjals are well cooked. Add
sugar
just before removing from fire.
Brinjal
