1 1/2 cup Brinjal (cut into pieces)1/2 cup Onion (chopped roughly)3/4 cup Tomato (cut into pieces)1/4 tsp Sugar1 dsp Coriander leaves (chopped)Oil (As reqd)Salt (As reqd)For preparing Masala:1/2 dsp Onion pieces2 nos Dry red chilliesCinnamon (Small piece)1/2 dsp Coriander powderTurmeric powder (A pinch)1 no Cloves (Grambu)1 no Cardamom (Elakka)1/4 tsp Cummin seeds (Jeerakam) Grind together the ingredients for preparing brinjal masala: onion pieces, red chillies, cinnamon, coriander powder, turmeric powder, cloves, cardamom and cummin seeds to a fine paste.Heat oil in a pan.Fry the brinjal pieces until golden.Add the onions and fry.Add the ground masala and fry till oil accumulates on top.Stir in tomato pieces and add required salt. Continue frying in medium heat.Pour 1/2 cup water into the gravy and stir in sugar. Heat the curry.When the gravy has acquired the desired consistency, remove from fire.Brinjal piralen is ready and garnish with coriander leaves. Serve hot. Kerala
