Keep it aside. Fry onion and garlic in the remaining oil.Add fried brinjal and mix. Add chilly powder and turmeric powder. Mix and fry for a while.Add tamarind paste and salt and few drops of water. Mix well.Cook for 2 mins.Smash it well and add fried curry leaves. :- You can use it with biriyani and rice, or as a substitute for pickle. Kerala
