Ingredients

Brinjal
4 - 5 nos for small brinjals, big
1/2
tsp
Turmeric powder
1 1/2
tsp
Chilly powder
1
tsp
Pepper powder
1/2
tsp
Garam masala
3
-
Grated
coconut
2
nos
Garlic
pods
1/2
tsp
Cumin seeds
Jeerakam
2
nos
Dry
red chillies
Kollamulaku
1/2
tsp
Mustard seeds
Curry leaves
A few
Salt
As reqd
Oil
for frying
Instructions
Cut
brinjal
to thin round pieces each about 1 cm thick.
Marinate the above with
turmeric powder
, chilly powder and
salt
. Keep aside for 10 minutes.
Heat some
oil
in a pan.
Fry the marinated
brinjal
pieces till brown. Drain and keep aside.
Heat 1 tbsp
oil
in a pan.
Splutter
mustard seeds
.
Add
curry leaves
and
red chillies
.
Add onions sliced lengthwise and saute well till light brown.
Add the fried
brinjal
pieces now.
Add
garam masala
,
pepper powder
and
salt
(only if needed).
Saute well.
Grind together grated
coconut
,
cumin seeds
and
garlic
pods to a paste and add this to the above.
Mix well.
:- Tastes great with rice and rotis
