Buckwheat Noodles

Noodles made of buckwheat flour mixed with tomatoes, rocket leaves and other ingredients

Ingredients
  

  • 250 g Buckwheat/Soba Noodles
  • 1 no Fresh red chilly seeded and chopped
  • 2 cloves Garlic crushed
  • 100 g Rocket leaves shredded
  • 1 no Tomato chopped
  • 1/2 tbsp Olive oil

Instructions
 

  • For preparing buckwheat noodles, first cook the noodles in boiling water in a pan following the packet instructions.
  • Drain the buckwheat noodles and set aside.
  • Heat olive oil in a frying pan and fry the crushed garlic in low heat. Add red chill, rocket leaves and chopped tomato.
  • Saute and cook for a few minutes until rocket leaves wilt.
  • Toss the sauted vegetable mixture with cooked buckwheat noodles and serve hot.
