Cabbage Upperi Easy Kerala vegetarian side dish with cabbage 1 no Cabbage (or 1/2 big, small)5 nos Garlic pods (peeled)4 - Green chillies (slit)1 tbsp Grated coconut (optional)2 tsp Oil10 - Curry leaves1 tsp Mustard seedsSalt (As reqd) Chop the cabbage very finely or grate it. After washing it, let it drain for 10 - 15 minutes. Crush once and then chop the garlic finely. Mix together cabbage, garlic and salt. Heat oil in a pan or a kadai. Splutter mustard seeds. Add the green chillies and curry leaves. Immediately, add the mixed cabbage and mix well. Cover the pan and reduce the heat to medium - low. After 5 minutes, remove the lid. Add coconut, if desired and stir well. Cover and cook, till the cabbage is done. :- Check for salt. Fry it on high flame for a minute. :- We like the cabbage a bit on the crisp side, so I do not cook it much. There is no need of water. Just keep an eye so that it soes not stick at the bottom of the pan. :- Serve with rotis or with rice Kerala
