Ingredients: 2 cups Grated carrot; 1 cup Dates (chopped); 1 cup Cashewnuts (chopped); 2 cups Sugar (powdered); 3 nos Eggs (white & yolk separated); 2 cups All purpose flour (Maida); 1 1/2 cups Refined oil; Vanilla essence (A few drops); 1 tsp Baking powder; 1 tsp Soda bicarbonate; 1 tsp Spices (powdered); Honey (As reqd)

Ingredients

2 cups Grated carrot
1 cup Dates chopped
1 cup Cashewnuts chopped
2 cups Sugar powdered
3 nos Eggs white & yolk separated
2 cups All purpose flour Maida
1 1/2 cups Refined oil
Vanilla essence A few drops
1 tsp Baking powder
1 tsp Soda bicarbonate
1 tsp Spices powdered
Honey As reqd

Instructions

Preheat the oven to 200 degree cen 375 degree f or Gas Mark 5.
Sieve flour together with baking powder and soda bicarbonate thrice.
Mix and beat well the powdered sugar and oil.
Add egg yolks and beat for 2 mins.
Add all the dry ingredients.
Pour in honey.
Add vanilla essence.
Beat the egg whites lightly stiff and fold into carrot mixture.
Place in a greased tray dusted 8 cups capacity.
Bake for 1 1/2 hrs.
Remove from the oven and cool in the tin.
Turn it over to a cooling rack.
