Carrot And Dates Cake Carrot and Dates Cake 2 cups Grated carrot1 cup Dates (chopped)1 cup Cashewnuts (chopped)2 cups Sugar (powdered)3 nos Eggs (white & yolk separated)2 cups All purpose flour (Maida)1 1/2 cups Refined oilVanilla essence (A few drops)1 tsp Baking powder1 tsp Soda bicarbonate1 tsp Spices (powdered)Honey (As reqd) Preheat the oven to 200 degree cen 375 degree f or Gas Mark 5.Sieve flour together with baking powder and soda bicarbonate thrice.Mix and beat well the powdered sugar and oil.Add egg yolks and beat for 2 mins.Add all the dry ingredients.Pour in honey.Add vanilla essence.Beat the egg whites lightly stiff and fold into carrot mixture.Place in a greased tray dusted 8 cups capacity.Bake for 1 1/2 hrs.Remove from the oven and cool in the tin.Turn it over to a cooling rack.
