Carrot Milk Burfi

Carrot Milk Barfi is basically an easy carrot based sweet dessert pudding recipe prepared mainly with fresh grated carrots,milk and milk powder. The recipe of carrot Milk barfi has very similar texture and colour to the traditional carrot halwa or gajrela but has a thick consistency and we can shaped it into square shapes. the sweet is mainly prepared during special occasions like diwali, holi etc..

  • Carrot(finely shredded) - 2 ½
  • Sugar - 1 cup
  • Milk - 1 cup
  • Milk powder - 1 cup
  • Cashew nuts(for garnishing) -
  • Condensed milk - 3/4 cup
  • Ghee - 3 tbsp

Instructions
  1. Take a saucepan and add carrot,sugar,milk and 2 tbsp ghee
  2. Cook until the carrots become soft and tender.
  3. Mix everything well and keep stirring, until the mixture absorbs all the water. Once that is done, turn off the flame .
  4. Transfer the mixture into a rectangular or square shape baking tray. Press down gently on the mixture with a spatula to make a smooth surface, then leave the tray aside.
  5. Heat a pan with milk powder, condensed milk and milk.
  6. Mix well until the mixture becomes a smooth paste.
  7. Pour the paste on top of the carrot mixture and make a smooth layer.
  8. Once it is properly set, cut the burfi into any shape you want. Enjoy..
