  • Cauliflower florets(chopped) - 250 g
  • Nutmeg(grated, Jathikka) - 1/4 tsp
  • Onion(chopped) - 1 no
  • *Vegetable Stock - 3/4 litre
  • Carrot(grated) - 1 tbsp
  • French beans(chopped) - 1 tbsp
  • Green chilliy(chopped) - 1 no
  • All purpose flour - 1 tbsp
  • Almonds(ground) - 25 g
  • Double cream - 50 ml
  • Vinegar - 2 tsp
  • Butter - 25 g
  • Roasted almond flakes - 1 tsp
  • Parsley(chopped) - 1 tsp

Instructions
  1. Melt butter in a pan and saute onion and cauliflower for ten minutes and keep aside.
  2. Fry carrot, beans and green chilly in the same pan. Add vinegar.
  3. Now add the vegetable stock. When it boils, simmer the flame and add nutmeg and ground almonds. Cover and boil in low flame for 15 minutes.
  4. Blend the cauliflower mixture along with double cream till smooth.
  5. Pour cauliflower/gobi/pookosu soup into the vegetable pan.Mix well.
  6. Pour the soup in a serving bowl and garnish with chopped parsley and almond flakes.
  7. Healthy as well as tasty cauliflower/gobi/pookosu soup is ready. Serve hot and enjoy.
