Ingredients
  

For Preparing Coconut Chutney:

  • 1 Cup Grated coconut
  • 5 Nos. Shallots
  • 2-4 Nos. Dried Red chilly
  • Salt as reqd

Instructions
 

  • Take the ingredients under the header, 'For Preparing Coconut Chutney" in a grinder. Grind into a coarse paste or texture. Keep aside.
  • Heat oil in a wide pan and add chopped shallots, green chilly and few curry leaves. Saute for few seconds.
  • Add two eggs and little salt.
  • Scramble the egg in low to medium flame for 1 minute.
  • Then add the ground chammanthi.
  • And cooked rice.
  • Combine well and cook for few minutes and remove from the flame.
  • Serve!
