Ingredients

  • 2 Cups Rice
  • 200 gms Chicken small pieces
  • 3 beaten egg
  • 1 small ginger
  • 5 pieces garlic
  • 3 big green chilly
  • 1 and pepper powder
  • 10 numbers Beans cut small diagonally
  • 1 number Carrot cut small diagonally
  • Salt for taste
  • Oil
  • 1 and Dark Soya Sauce
  • 1 and Vinegar
  • 1 teaspoon sugar

Instructions

  • Prepare the ingredients. Soak rice in water for 15 minutes.
  • Marinate the chicken pieces in 2 teaspoon pepper powder, 1 teaspoon egg and salt and keep it for 15 minutes.
  • Fry the rice in little oil for around 5 mts. This way rice wont stick each other. Pour water around 5 cups and add some salt (water should be little salty). Cook the rice until it is 99% cooked.Drain the rice in a colander and run some cold water and keep it aside to drain completely. The cold water will stop the cooking of rice further.
  • Heat a thick bottom kadai and add enough oil to fry the chicken pieces. Once fried keep it aside in a paper towel to drain the oil.
  • Remove some oil from the kadai and put ginger, garlic and green chillies and saute it until the raw smell is gone. You need only little oil to fry this.
  • Now add the beaten egg, mix well with ginger/garlic and chilly and fry it.
  • Once egg is fried mix it with fried chicken for few mts. Now add the beans and carrot, add some salt, pepper powder and 1 teaspoon sugar and mix well. Cook it for few minutes. Beans and carrot should not be cooked for a long time, there should be a crunchiness.
  • Now add the rice into kadai, add the soya sauce and vinegar and mix it well. You can also add soya sauce/vinegar little by little and mix and taste it to make sure it is just enough.
  • Chicken Fried Rice is ready.

Notes

To increase the taste you can add little ajinomoto/msg if you want.
