Chicken Rezala is an authentic Bengali recipe. It is a chicken curry in a white gravy. This dish was invented by Royal Chef's of Bengal.

  • Chicken : 2 pounds -
  • Cashew nuts paste: 2 tbsp -
  • Poppy seeds paste: 2 tbsp -
  • Ghee: 3 tbsp -
  • Onion paste : 1 cup -
  • Garlic grated: 1 tbsp -
  • Ginger grated: 1 tbsp -
  • Red chilli : 2 - 3
  • Veg oil: 2 tbsp -
  • Bay leaf: 1 -
  • Cardamom: 4 -
  • Cinnamon: 1 -
  • Cloves – 3 -
  • Peppercorn : 1 ½ tsp -
  • Nutmeg powder : pinch -
  • Curd: 5 tbs -
  • Sugar/ optional : 1 tsp -
  • Green chilli chopped : 2 - 3
  • Cream : ¼ cup -

Instructions
  1. In a bowl add pepper powder, garlic, ginger, veg oil, salt and mix together. Add the chicken and curd. Marinate well. Keep it aside for 2 hours.

  4. Heat oil and ghee in a pan add bay leaf, red chilli, cloves, cardamom, cloves, and stir for few seconds.
  5. Add onion paste and stir till the raw smell going out.
  6. Add green chilli, nutmeg powder and stir continuously for one minute. Add the cashew nut paste and poppy seeds paste. Stir for few minutes.
  7. Add marinated chicken. Mix well with the other ingredients. Add enough water for cook the chicken. Stir and cover with a lid and allow to cook the chicken in a low flame.

  10. Add the cream and sugar. stir check for salt and sweetness and adjust your taste. Switch off the flame and remove the curry in a bowl and serve.
