Wash the chicken mince and leave to drain and set aside.
Heat oil in a pan, add the chopped onions, garlic and chilly and sautT till translucent.
Add chicken and stir fry till the colour of the flesh changes to white.
:- The pan should be sufficiently hot so that the chicken will not cook in its own stew.
Season with salt and add celery. Stir till well combined and the chicken is cooked.
Add fresh herbs and stir well.
Remove from the stove and leave to cool.
Use the biscuit cutter and cut rounds from the bread.
Pile the chicken mixture on top of the rounds.
Press down firmly, removing bits that stray from the rounds.
