Ingredients

Chicken
washed thoroughly and cut into cubed- pieces

Onion
chopped in small cubes, medium
1
tbsp
Tomato
paste
2
tbsp
Ginger
& Garlic paste
5
tbsp
Coconut Oil
1/2
tsp
Black
mustard seeds
1
tbsp
Red chilly powder
2
tbsp
Coriander powder
1
tbsp
Garam masala
1/4
tsp
Turmeric powder
1/4
tsp
Pepper powder
Salt
as reqd
Coriander leaves
to garnish
Curry leaves
Instructions
In a separate pan, heat
coconut oil
and add the uncooked chicken pieces.
Wait till their
water
comes out and then drain the chicken in a strainer and keep aside.
Heat
coconut oil
in another pan.
Splutter black
mustard seeds
,
curry leaves
.
Add
onion
till golden brown (may take atleast 8 mts in medium heat).
Add
ginger
/
garlic
paste and saute for a minute.
Add
tomato
paste and cook until soft, for about 5 - 7 mins.
Turn heat to low heat and add red chilly powder,
coriander powder
,
cumin powder
,
turmeric powder
,
pepper powder
,
garam masala
and
salt
.
Saute thoroughly for atleast 10 minutes in low heat for masalas to bring out the flavor and smell.
Add the kept aside chicken pieces and saute thoroughly over medium-high heat (adjust heat as needed).
Stir regularly so it doesn`t stick to bottom. :- If it sticks add little more
oil
.
Cook chicken uncovered until well done.
:-Garnish with coriander leaves.
