Chilli Bajji is a delicious South Indian street snack very much relished during evenings with a cup of hot chai. The snack tastes awesome with Masala Chai. Chilli Bajji is unique and special with long green chillies dipped in a spicy batter and deep fried. Prefer long varieties of chillies for the snack. Also do remember to remove the seeds and pith. If the seeds and pith are not removed then the chillies can taste too hot and pungent. Most of the office pantries, road side shops, tea stalls, and almost all restaurants serve this crispy and spicy Mulaku Bajji. Serve Mulaku Bajji with a favorite red chutney that makes a yummy snack.   • Clean the chilies, cut into half and take out the seeds.
  • Mix together gram flour, required salt, chilli powder, turmeric powder, asafoetida and baking soda to dosa batter consistency.
  • Heat oil in a pan for deep frying. When oil is hot, dip each chilli in the batter and coat well. Drop in the hot oil and cook both sides until crisp and golden brown in color.
  • Serve bajjis hot with chutney or tomato sauce.
