In the same wok, add the oinions which should be sliced very thinly, and saute till golden brown.
Add the ginger and garlic paste and saute a further 4 - 5 mins making sure that it does not get burnt.
Add the chicken pieces and the sauces and saute for a few minutes till the chicken is well coated with the sauces.
Add the green chillies, the zeal and water and simmer till the chicken is cooked (note add just enough water).
When cooked, add the pepper and the coriander and mint paste and cook a further two minutes till the mint and coriander aroma comes.
Saute in another frying pan the capsicum in oil for 5 mins or less and add this to the chicken.
:- Serve hot.
:- Note cashew nuts and raisins can be added for flavour and decor, for this the raisins and cashews need to be fried a bit in butter and then added to the chicken.
