Ingredients
  

For noodles:

  • 100 gm Crispy Egg Noodles Readymade
  • 10 cups Water
  • 1 tbsp Oil
  • 1 tbsp Corn flour
  • 1 tbsp Salt

For chopsuey:

  • Crispy noodles
  • 150 gm Chicken meat shredded
  • 100 gm Prawns cleaned
  • 1 no Carrot cut into thin long pieces
  • 15 nos Beans cut into thin long pieces
  • ½ cup Cauliflower cut into flat pieces
  • ½ cup Mushrooms sliced
  • 3 nos Spring onions chopped
  • ¼ Small cabbage shredded
  • 5 nos Green chillies chopped
  • 1 stem Celery chopped
  • 1 cup Stock
  • Cornflour I tbsp
  • 2 tbsp Water
  • 4 tbsp Tomato ketchup
  • ¼ tsp Ajinomoto
  • ½ tsp Pepper powder
  • 6 tbsp Oil
  • Salt As reqd
  • 2 nos Eggs for garnishing

Instructions
 

  • For making noodles: 1)With 10 cups of water, cook the noodles on high flame.
  • Add salt into it.
  • Boil, until 75% is cooked.
  • Drain and add 1 tbsp oil.
  • Cool it and mix the corn flour.
  • Heat the oil in a pan.
  • Deep fry the noodles. Turn over the noodles, until it is light brown.
  • Remove it then and drain it.
  • For making Chopsuey: 1)Boil all the vegetables, except mushrooms, spring onion, celery and green chillies in water, enough to cover the vegetables.
  • Add a pinch of salt and sugar.
  • Boil it for a minute and drain it.
  • Heat oil in a pan.
  • Stir fry the spring onion, celery and green chillies for 5 seconds.
  • Add the shredded chicken, prawns and fry for another 5 min.
  • Add the mushrooms, cauliflower and the remaining vegetables, pepper, ajinomoto, salt, tomato ketchup and stock.
  • Bring to a boil and stir well.
  • Add the corn flour mixed with water, stirring, until thickened.
  • Put the crispy noodles on a plate and top with chicken and vegetable mixture or serve the crispy noodles side by side with the chicken and vegetable mixture.
  • Garnish with 2 fried eggs(fry the eggs like the way u make bull¦s eye(half boil) but fry both the sides) in the centre.
