Ingredients
For noodles:
  • Crispy Egg Noodles(Readymade) - 100 gm
  • Water - 10 cups
  • Oil - 1 tbsp
  • Corn flour - 1 tbsp
  • Salt - 1 tbsp
For chopsuey:
  • Crispy noodles -
  • Chicken meat(shredded) - 150 gm
  • Prawns(cleaned) - 100 gm
  • Carrot(cut into thin long pieces) - 1 no
  • Beans(cut into thin long pieces) - 15 nos
  • Cauliflower(cut into flat pieces) - ½ cup
  • Mushrooms(sliced) - ½ cup
  • Spring onions(chopped) - 3 nos
  • Small Cabbage(shredded) - ¼
  • Green chillies(chopped) - 5 nos
  • Celery(chopped) - 1 stem
  • Stock - 1 cup
  • Cornflour(I tbsp) -
  • Water - 2 tbsp
  • Tomato Ketchup - 4 tbsp
  • Ajinomoto - ¼ tsp
  • Pepper powder - ½ tsp
  • Oil - 6 tbsp
  • Salt(As reqd) -
  • Eggs for garnishing - 2 nos

  • Crispy noodles -
  • Chicken meat(shredded) - 150 gm
  • Prawns(cleaned) - 100 gm
  • Carrot(cut into thin long pieces) - 1 no
  • Beans(cut into thin long pieces) - 15 nos
  • Cauliflower(cut into flat pieces) - ½ cup
  • Mushrooms(sliced) - ½ cup
  • Spring onions(chopped) - 3 nos
  • Small Cabbage(shredded) - ¼
  • Green chillies(chopped) - 5 nos
  • Celery(chopped) - 1 stem
  • Stock - 1 cup
  • Cornflour(I tbsp) -
  • Water - 2 tbsp
  • Tomato Ketchup - 4 tbsp
  • Ajinomoto - ¼ tsp
  • Pepper powder - ½ tsp
  • Oil - 6 tbsp
  • Salt(As reqd) -
  • Eggs for garnishing - 2 nos

Instructions
  1. For making noodles: 1)With 10 cups of water, cook the noodles on high flame.
  2. Add salt into it.
  3. Boil, until 75% is cooked.
  4. Drain and add 1 tbsp oil.
  5. Cool it and mix the corn flour.
  6. Heat the oil in a pan.
  7. Deep fry the noodles. Turn over the noodles, until it is light brown.
  8. Remove it then and drain it.
  9. For making Chopsuey: 1)Boil all the vegetables, except mushrooms, spring onion, celery and green chillies in water, enough to cover the vegetables.
  10. Add a pinch of salt and sugar.
  11. Boil it for a minute and drain it.
  12. Heat oil in a pan.
  13. Stir fry the spring onion, celery and green chillies for 5 seconds.
  14. Add the shredded chicken, prawns and fry for another 5 min.
  15. Add the mushrooms, cauliflower and the remaining vegetables, pepper, ajinomoto, salt, tomato ketchup and stock.
  16. Bring to a boil and stir well.
  17. Add the corn flour mixed with water, stirring, until thickened.
  18. Put the crispy noodles on a plate and top with chicken and vegetable mixture or serve the crispy noodles side by side with the chicken and vegetable mixture.
  19. Garnish with 2 fried eggs(fry the eggs like the way u make bull¦s eye(half boil) but fry both the sides) in the centre.
