Clay Pot Chicken Rice Chinese style rice with chicken 2 cups Long grain rice (washed and soaked for 10 mins)2 nos Dried mushrooms (washed and soaked in hot water for 10 mins and cut into cubes)Ginger (minced)1 no Garlic pod (minced)3 nos Chicken drumsticksSalt (As reqd)2 tbsp OilSpring onions for garnishingFor marinating:-1 tbsp Sesame oil1 tbsp Rice wine2 tbsp Oyster sauce1 tbsp Dark soy sauce Marinate the chicken pieces with the ingredients for marination for 10 mins.Heat oil in a wok.Add ginger and garlic. When it is slightly brown, add the chicken with the marinade and fry for 4 mins.Add the drained rice and the mushrooms and fry, till the rice is opaque.Transfer the chicken rice mix to a claypot.Add 4 cups of water and sufficient amount of salt.Cook it on fire, till the water is almost gone and you can see the bubbles on the rice surface. Remove from fire.Heat oven to 150 degree and place the clay pot in the oven for 15 mins. Garnish with spring onions.:- Serve hot. Chinese
