Coconut And Peanut Chicken Delicious creamy chicken curry with fried nuts 1 no Chicken (cut into 10 pieces)1 no Onion (finely sliced, large)1 tsp Garlic (crushed)1/2 tsp Ginger (crushed)1 tsp Salt3 - Green chillies (crushed)3 - Coriander leaves (chopped)1 tsp Cumin seeds (Jeerakam)2 cups Coconut milk4 nos Garlic pods (sliced)3 tbsp Peanuts (slightly crushed, Nelakadala)1/2 cup Oil Heat 1/4 cup of oil in a pan or a kadai.Add onions and saute, till they turn golden brown.Add cumin seeds and fry for a while.Add chicken, ginger, garlic, salt and green chillies and fry for 1 - 2 mins. Lower the heat and simmer, till the chicken becomes tender. Increase heat and cook, till the water is completely dried up.Add coconut milk and coriander leaves.Bring it to a boil.Fry garlic slices and peanuts in remaining oil for a minute or two and pour into chicken mixture.Cook, till the sauce thickens slightly.:- Serve hot with basmati rice.
