Coconut Lobster Curry
Lobster(Konju) curry made with
coconut
milk

Ingredients

Lobsters(Konju)
cracked, small

tbsp
Coconut oil
2
nos
Onions
finely sliced
6
nos
Green chillies
slit lengthwise
3
nos
Garlic
pods
sliced into fine strips
20
nos
Curry leaves
1 1/2
tsp
Turmeric powder
1 1/2
tsp
Salt
2 1/2
cups
Coconut
milk
Coriander leaves for garnishing
Instructions
Heat
oil
in a wide pan.
SautT the
onion
, chillies and
garlic
.
Add 10
curry leaves
.
When the onions turn translucent, add
turmeric powder
and
salt
.
Add
coconut
milk
and heat through.
Add lobsters and simmer gently.
Fry remaining 10
curry leaves
in a separate pan.
:- Lobsters should be cooked in 7 - 9 minutes, depending on size.
Garnish with fried
curry leaves
and coriander leaves.
:- Serve in deep dish laden with their sauce with steamed rice alongside.
