Coconut Lobster Curry Lobster(Konju) curry made with coconut milk 4 nos Lobsters(Konju) (cracked, small)2 tbsp Coconut oil2 nos Onions (finely sliced)6 nos Green chillies (slit lengthwise)3 nos Garlic pods (sliced into fine strips)20 nos Curry leaves1 1/2 tsp Turmeric powder1 1/2 tsp Salt2 1/2 cups Coconut milkCoriander leaves for garnishing Heat oil in a wide pan.SautT the onion, chillies and garlic. Add 10 curry leaves.When the onions turn translucent, add turmeric powder and salt.Add coconut milk and heat through.Add lobsters and simmer gently. Fry remaining 10 curry leaves in a separate pan.:- Lobsters should be cooked in 7 - 9 minutes, depending on size. Garnish with fried curry leaves and coriander leaves.:- Serve in deep dish laden with their sauce with steamed rice alongside. Kerala
