2 cups Cooked rice1/2 cup Coconut (grated)2 nos Onion (big)3-4 nos Green chilliesCurry leaves (A few)2 tbsp Urad dalSalt (As reqd)2-3 springs Coriander leaves2 tbsp Coconut oil1 tsp Mustard1/2 tsp Cumin seeds (Jeerakam)2-3 nos Red chillies (chopped in 3 pieces) For preparing coconut-onion rice, soak urad dal in water for 10 minutes and strain extra water.Chop onion, green chillies and coriander leaves.In a kadai, heat coconut oil and fey red chillies, cumin seeds and mustard. When mustard splutters. Add urad dal and sautT for 5-8 minutes.Now add green chillies, onion and curry leaves and sautT.Add grated coconut and sautT for 10 minutes adding salt.Remove from fire, transfer cooked rice to this and mix well.Finally sprinkle chopped coriander leaves over the rice.Coconut-onion rice is ready, Serve with pudina chutney.
