For Preparing Masala Paste For Coimbatore Special Street Food:

Other Ingredients For Preparing Gravy:

  • 2 tbsp Vegetable oil
  • 1 no. Onion Chopped
  • 1 tsp Kashmiri Red Chilly powder
  • 1/2 tsp Garam masala
  • 1 tsp Corn flour
  • 1 no. Juice of a small lemon
  • As reqd Salt
  • 1 Cup Water

For Preparing Cabbage Pakodas:

  • Now slice cabbage and add all ingredients listed above: maida, corn flour, red chilly powder, turmeric powder and required salt. Do not add any water. Keep aside for 10 minutes. The vegetable mixture would be wet due to all the natural juices that have come out.

For Preparing Mushroom Pakodas:

  • Next, chop mushrooms and add ingredients listed above: maida, corn flour, red chilly powder, turmeric powder and required salt. Do not add water and keep aside for 10 minutes. Natural juice would have come out.
  • Deep fry the cabbage mixture in hot oil. The oil will be bubbly since there will be water content. Remove from fire once the cabbage pakodas are brown and crispy.
  • Next, deep fry the mushroom till they are brown and done. Keep the mushroom pakodas aside.
  • Now grind together all the ingredients listed under Masala Paste: garlic cloves, tomato, fennel seed powder, pepper powder and mint leaves. Grind to a smooth paste and keep aside.

For Preparing Gravy:

  • In same pan add some more oil if required and add chopped onion.
  • Saute onion well and add the spice powders: kashmiri red chilly powder and garam masala. Stir well and add the previously ground masala paste. Saute well till oil appears on top.
  • Now dissolve corn flour in 1 cup water and add to the sauteed mixture. Add juice of 1 lemon, required salt and bring to boil.
  • Next, add both fried mushroom and cabbage pakodas to the boiling mixture. Smash the pakodas with a spatula.
  • Cook till the water drains completely and the pakodas are tossed well. Stir in between.
  • Now its time for garnishing. Serve the Roadside Kaalan with a sprinkling of shredded carrots, onions, coriander leaves, little bit of green chillies and lime wedges. Coimbatore Special Street Food is ready to serve.
