  • Chinese stir fry frozen mixed vegetables - 250 g
  • Vegetable oil for deep frying -
For preparing peanut sauce:
  • Crunchy peanut butter - 1/4 cup
  • garlic(crushed) - 1 clove
  • Brown sugar - 1/2 tbsp
  • Coconut milk - 3/4 cup
  • Hot chili sauce - 1 tsp
  • Light soy sauce - 1 tbsp

Instructions
  1. For preparing crispy egg noodles with vegetables, first cook egg noodles in boiling water for 2-3 minutes and then drain well.
  2. Heat oil in a saucepan and deep-fry the cooked noodles in batches for 2-3 minutes until golden and crispy. Drain on an absorbent kitchen paper and set aside.
  3. Cook chinese mixed vegetables following packet instructions. Drain and keep aside.
  4. Now we are entering the final stage of our preparation of crispy egg noodles with vegetables. For preparing peanut sauce, place the ingredients: peanut butter, crushed garlic, brown sugar, coconut milk and hot chili sauce in a saucepan and cook for 3-4 minutes.
  5. Crispy egg noodles with vegetables is ready. Divide the fried noodles in the serving plates. Top with vegetables and stir in sauce.
