Cut the potatoes in thin size (or in the thickness as required) into the water as shown in below picture.
Put some salt in the water and keep the sliced potatoes in this saltwater for about 15 minutes (this helps to remove starch from potatoes to some extend and also after frying the chips, it is not necessary to add salt) .
Then remove the water and allow it dry for about an hour (make sure that the potatoes are dried well otherwise it will spatter at the time of putting into the hot oil and create unnecessary problems).
Heat oil in a frying pan and put the dried potato slices into it and stir it.
When the colour of the chips turns into golden, remove it from the frying pan and serve it with coffee / tea or any other drinks.
If you want to make the chips spicy then add some red chilli powder also and mix it well.
