  • Thick fresh noodles - 250 gm
  • Oil - ¼ cup
  • Garlic cloves(sliced) - 2 nos
  • Onion(finely sliced) - 1 no
  • Red capsicum(cut into thin 4 cm long strips) - 1 no
  • Cucumber(small and unpeeled and cut into thin 4 cm strips) - 1 no
  • Curry powder - 2 tsp
  • *Vegetable Stock - ½ cup
  • Soya Sauce - 1 tbsp
  • Sugar - ½ tsp
  • Spring onions(chopped) - 3 nos
  • Salt(As reqd) -

Instructions
  1. Cook noodles in a large pan of boiling water, until just tender and leave it to drain. 2)Heat oil in a wok or pan.
  2. Add garlic, onions and red capsicum.
  3. Stir over medium heat for 3 minutes.
  4. Add cucumber and curry powder and stir over medium heat for another 3 minutes. 6)Add veg stock, Soya sauce, salt and sugar and stir until mixture boils.
  5. Add noodles and spring onions and stir over low heat 3 minutes or until ingredients are well combined and heated through.
