Dahi Vada Easy Chilled Dahi/Curd vadas For making vadas:-1/2 cup Raw rice1/2 cup Red gram (Thuvaraparippu)1/4 cup Black gram (Uzhunuparippu)8 nos Green chilliesAsafoetida (a small piece, Kayam)2 stalks Curry leavesSalt (As reqd)Oil for frying For making dahi vadas:1 kg Curd1 no Fresh coconut (grated)2 tbsp SugarSalt (As reqd)1 tbsp Oil8-10 nos Curry leaves1 tsp Mustard Seed4 nos Dry red chillyCoriander leaves (A few, finely chopped) For making vadas: !)Soak the rice and the two dals in water. Drain and grind them well adding alongwith the green chillies, curry leaves and asafoetida. Add salt to taste and mix well. Make small balls off it of the size of a marble. Dip your hands in water and flatten each ball with the fingers.Fry them till they become golden brown. For making dahi vadas: 1)Soak the above plain vadas for 5 hours in water. Sqeeze out the water.Beat curd with sugar and salt. Heat some oil in a pan and add mustard seeds. When they splutter, add red chillies followed by the curry leaves.Add the seasoning along with the grated coconut to the beaten curd.Finally, slip in the vadas into the curd.Garnish with chopped coriander leaves.Refrigerate for 2 hours before serving.:-Makes 25 Dahi Vadas North Indian
