For making dahi vadas:

  • 1 kg Curd
  • 1 no Fresh coconut grated
  • 2 tbsp Sugar
  • Salt As reqd
  • 1 tbsp Oil
  • 8-10 nos Curry leaves
  • 1 tsp Mustard Seed
  • 4 nos Dry red chilly
  • Coriander leaves A few, finely chopped

Instructions
 

  • For making vadas: !)Soak the rice and the two dals in water.
  • Drain and grind them well adding alongwith the green chillies, curry leaves and asafoetida.
  • Add salt to taste and mix well.
  • Make small balls off it of the size of a marble.
  • Dip your hands in water and flatten each ball with the fingers.
  • Fry them till they become golden brown.
  • For making dahi vadas: 1)Soak the above plain vadas for 5 hours in water.
  • Sqeeze out the water.
  • Beat curd with sugar and salt.
  • Heat some oil in a pan and add mustard seeds. When they splutter, add red chillies followed by the curry leaves.
  • Add the seasoning along with the grated coconut to the beaten curd.
  • Finally, slip in the vadas into the curd.
  • Garnish with chopped coriander leaves.
  • Refrigerate for 2 hours before serving.
  • :-Makes 25 Dahi Vadas
