Delicate And Instant Achar Out Of Neem Flowers

Mangoes

Neem flowers
A handful

tsp
Jaggery
scrapped, Sharkara
2
tsp
Tamarind
juice
1/2
tsp
Red chilly powder
1/4
tsp
Mustard seeds
Asafoetida powder
A pinch, Kayam
5-6
leaves
Curry leaves
Salt
As reqd

Oil
Instructions
For preparing delicate and instant achar out of neem flowers, wash and cut mangoes into small pieces.
Take a small pan and fry the neem flowers in 1/2 tsp
oil
. Keep it aside.
Take another pan heat the remaining
oil
and splutter
mustard seeds
.
Add the neem flowers and asafoetida to this and stir.
Add mangoes at this point. Stir for a few minutes.
Add little
water
and cover it. Allow it to cook till the mangoes become soft.
Once cooked, add
jaggery
, chilly powder,
tamarind
juice and
salt
.
Lastly, add
curry leaves
and mix everything well.
Delicate and instant achar out of neem flowers is ready.
