This dish is one of my favorites for the regular chapatti veg combo. Winter time, who really wants to go for salads??? Piping hot curries with some Indian flat breads like chapatti or phulka or fried bread like puris are just perfect to warm up
Peel, wash and cube the potatoes. Chop the onions finely. Crush the gingergarlic. Chop the chillies and coriander leaves.
Heat a pan with generous amount of oil. Add the onion and saute for a minute. Add the green chillies and gingergarlic. Continue to saute till all these turn tender
Add the potatoes and fry for a minute on high flame. Add the turmeric and give a thorough mix.
Reduce the flame to medium and allow to cook the potatoes till half done.
Add salt and cilantro and incorporate well. Stick back the lid on and cook till done.
Sprinkle the pepper and cumin and give a mix. Add a dash of ghee. Put back the lid on and keep on low flame for a minute and switch off the stove.
