Diced Chicken In Chilly Sauce Fried chicken in spicy sauce 750 gm Boneless chicken (cut into small pieces)1 no Onion (sliced into 4 equal quartrets, small)7 - Green chilliesGinger (the more the better)Soy sauce (A dash)Tomato (chilli sauce)1 tbsp Chilli oil (if available)4 tbsp Allpurpose flour (Maida)4 tbsp CornflourVegatable oil for fryingAjinomoto(optional)1/2 cup Chicken stockSalt (As reqd)Turmeric powder (A pinch)Spring onions for garnishingCelery for garnishing Boil the chicken with salt and turmeric powder.For making the batter:- 1)Mix together the maida and about 3 tbsp of cornflour.Add 1 tsp each of ginger & garlic paste.:- Adding a paste of around 1-2 green chillies would be good for those who like spicy stuff.Add salt and a bit of warm water and mix well.Dip the chicken pieces in the batter and deep fry in vegetable oil.:- Do not use coconut oil.For making the sauce:- 1)Heat a bit of oil in a pan.Saute the diced onions & ginger- garlic paste.Add the chicken stock, around 2 tbsp each of tomato sauce, chilli sauce, chilli oil and soy sauce.Add 5 - 6 green chillies split into 2 halves into the sauce.Add salt/ajinomoto as per taste.Dissolve 1 tsp of cornflour in a little water and add to the mixture.:- The mixture will thicken in a flash.Add the fried chicken and toss.Garnish with spring onions and celery.:- Serve as a side dish for Fried rice, Noodles etc. Chinese
