Easy Chicken Olathiyathu Chicken fry made easy 1 kg Chicken1" piece Ginger (ground)1 no Garlic pod (ground)1 tsp Turmeric powder3 tsp Chilly powder3 tsp Coriander powder1 heaped Garam masala powderSalt (As reqd)2 nos Onion (cut into medium pieces, large)2 nos Tomatoes (cut into quarters, medium)3 - Coconut oilCurry leaves (A few)Coriander leaves for garnishing Wash chicken well and cut into medium pieces.Mix together onion, masala powders, ginger paste and garlic paste.Rub the above paste onto the chicken pieces and marinate it atleast for 1 hour. 4)Heat up a pan.Add a cup of water along with salt and tomatoes. Mix well.Allow it to boil on a medium flame.Stir occasionally, cover & cook, till water is absorbed & chicken is done.Heat oil in a non-stick pan.Add curry leaves and saute.Add chicken pieces and gently toss around.Cook, till the pieces turn brown and all the water is dried up.Garnish with curry leaves and coriander leaves.:- Serve hot.:- You can add more oil, if necessary.
