Ingredients: 2 1/2 cups Cooked rice; 1/2 tsp Salt; 1/8 th Pepper powder; 2 nos Green chillies (finely chop or grind to paste)); 1 red chilly; 1 inch Ginger; 2 tbsp Grated coconut; 1 tbsp Coriander leaves (finely chopped); 1 tbsp peanuts (optional); 1 tbsp Oil; 1/2 tsp Mustard seeds; 1 tsp Cumin seeds (Jeerakam); 1 tsp Bengal gram (Kadalaparippu); 1/2 tsp Black gram (Uzhunnuparippu); 2 sprigs Curry leaves; 1 or ghee roasted cashews (for garnishing))

Ingredients

2 1/2 cups Cooked rice
1/2 tsp Salt
1/8 th Pepper powder
2 nos Green chillies finely chop or grind to paste)
1 red chilly
1 inch Ginger
2 tbsp Grated coconut
1 tbsp Coriander leaves finely chopped
1 tbsp peanuts optional
1 tbsp Oil
1/2 tsp Mustard seeds
1 tsp Cumin seeds Jeerakam
1 tsp Bengal gram Kadalaparippu
1/2 tsp Black gram Uzhunnuparippu
2 sprigs Curry leaves
1 or ghee roasted cashews for garnishing)

Instructions

Heat oil in a pan.
Season with mustard seeds, Bengal gram, black gram, cumin seeds, dry red chillies and curry leaves ,cashews and peanuts(optional).
Add the finely grated ginger and green chillies and saute for 1/2 minute.
Add grated coconut and immediately add salt, pepper, coriander leaves and finally rice and mix well.
:- Serve hot.
note: ------- -This can be prepared as naivedyam for pujas.

My husband likes Coconut rice. I try the above recipe and it turn-out excellent,though its simple and easy. My hubby enjoyed it and i do make it often.
