100 g Mushrooms (cut into quarters)3 nos Garlic cloves (finely chopped)Ginger (finely chopped)Red chilly powder (A pinch)Cumin seeds (A pinch, Jeerakam)1/2 tbsp OilSalt (As reqd)2 nos Egg First heat oil in a pan and splutter cumin seeds.Add chopped ginger and garlic. Saute well for a few seconds.Stir in mushroom pieces, red chilly powder and salt. Saute in high heat for 2 minutes.Lower the heat and cook until mushrooms are done. Switch off the gas when water content fully evaporates.Beat egg in a bowl and fry well.Immediately, transfer mushrooms to a serving bowl. Make sure that mushrooms are not overcooked.You can serve easy mushroom/khombi dry stir as a healthy snack or even as an accompaniment with egg omelet. Kerala
