Instructions
  1. Grind together the ingredients for grinding into a coarse paste.
  2. Heat oil in a pan or a kadai.
  3. Saute onions, garlic, ginger and green chillies.
  4. Add coriander powder, red chilly powder and turmeric powder.
  5. Add potatoes, tomatoes and salt.
  6. Cook till potatoes are done.
  7. Add coconut paste and cook for 2 mins.
  8. Cut eggs into half add to the mix.
  9. Mix well.
  10. Finally, add coconut oil.

A variation of this is to add Coconut milk at the end. It will be much tastier.
