Instructions
  1. Grind together coconut, cumin seeds and green chillies.
  2. Heat oil in a pan or a kadai.
  3. Add curry leaves, chopped onion and ginger and allow it to turn brown.
  4. Add tomato and cook it.
  5. Add potato pieces.
  6. Add coconut paste and cook, till the potatoes are done.
  7. Add boiled egg, pepper powder, curd and salt.
  8. Turn off the flame and sprinkle curry leaves on top.

Experimentation is good. This dish is not bad either. But don`t call it aviyal as it is misleading. In aviyal there are no tomatoes. Nonetheless this is a good egg curry.
