For preparing Egg Kebab, first boil the eggs.Boil the potatoes and mash them.Heat oil in a pan and add onion along with chopped green chillies and saute well. Then, add curry leaves, ginger, garlic, turmeric powder and garam masala. Saute well.Add mashed potatoes, mint and coriander leaves and mix well. Check for salt and add if required.
