Eggplant Raita Raita made with eggplant(brinjal) 1 no Eggplant(medium) (Vazhuthananga)1/2 cup Onions(optional) (chopped)1/2 cup Grated coconut (optional)1 cup Yoghurt/CurdSalt (As reqd)For seasoning: 2 tsp OilAsafoetida (A pinch, Kayam)1 tsp Mustard seeds1 tsp Black gram (Uzhunnuparippu)2 nos Red /green chillies Cut eggplant into small pieces. Grind coconut by adding desired amount of water and set aside. Heat oil in a pan.Add all the ingredients for seasoning one by one. Add the eggplant pieces and stir fry in low heat. Don`t cover with the lid. Fry until cooked. Allow it to cool.Mix yoghurt and ground coconut. Add salt and chopped onions. :- Serve with plain rice or with any pulao. Goa
