  • Eggplant(medium)(Vazhuthananga) - 1 no
  • Onions(optional)(chopped) - 1/2 cup
  • Grated Coconut(optional) - 1/2 cup
  • Yoghurt/curd - 1 cup
  • Salt(As reqd) -
  • For seasoning: -
  • Oil - 2 tsp
  • Asafoetida(A pinch, Kayam) -
  • Mustard seeds - 1 tsp
  • Black gram(Uzhunnuparippu) - 1 tsp
  • Red /green chillies - 2 nos

Instructions
  1. Cut eggplant into small pieces.
  2. Grind coconut by adding desired amount of water and set aside.
  3. Heat oil in a pan.
  4. Add all the ingredients for seasoning one by one.
  5. Add the eggplant pieces and stir fry in low heat. Don`t cover with the lid.
  6. Fry until cooked.
  7. Allow it to cool.
  8. Mix yoghurt and ground coconut.
  9. Add salt and chopped onions.
  10. :- Serve with plain rice or with any pulao.
