Elaanji Pollichathu A Ramzan special - Elaanji Pollichathu 2 nos Eggs3 tbsp MaidaSalt (A pinch)Water (A little)½ of Coconut250 gm Sugar4 tsp Cashewnuts – 3 (broken)Raisins (A few, Onakkamunthiri)Ghee (As reqd) Heat ghee in a pan or a kadai.Add grated coconut, sugar, cashews and raisins and fry well.Mix together maida and water to make a thin batter.Add egg and salt and mix well.Heat up a small frying pan.Pour a tbsp of the above batter into it and make a pancake.Repeat the procedure till all the batter is used up.Place a small portion of the coconut mixture inside one pancake and roll it well.Repeat the same procedure for other pancakes too.:- Serve hot.
