For masala paste:-
  • Roasted Peanuts - 3 -
  • Golden brown fried onion - 1 big/medium
  • Fried grated coconut - 2 tbsp
  • Fried fennel seeds(Perinjeerakam) - 1/2 tsp
  • Crushed ginger & garlic - 2 -
  • Powdered cinnamon(Karugapatta) - 1 tsp
  • Powdered cardamom & sugar mixture(Elakka) - 1 tbsp
  • Bay leaves(Biriyani leaf) - 1 tsp
  • Geen chilly - 1 no
  • Fried Red chilly - 1 no
  • Coriander leaves - 1/2 tsp
  • Curry leaves - 2 leaves

Instructions
  1. Cook rice separately in a pressure cooker by adding along a tbsp of oil and 1/2 tsp of salt.
  2. :- Make sure u don`t overcook.
  3. After u have made the cooker stove off, take the cooked rice out & add extra fresh water to it.
  4. Drain it & keep aside.
  5. Make the masala paste by mashing the ingredients of masala paste in a mixer grinder to a smooth paste.
  6. Sprinkle water while mashing if reqd.
  7. Heat 2 tbsp of ghee in a non stick pan.
  8. Fry the sliced onion.
  9. Add the above vegetables & fry.
  10. :- You can spray some water in between so as to cook well.
  11. Once cooked, add 2 more tbsp of ghee.
  12. Add the masala paste & stir fry along with the vegtables.
  13. Add more ghee & spray water if reqd.
  14. :- Remember it should not be watery.
  15. Cover & cook for 5 mins in simmed stove.
  16. Once vegetables are cooked, take the rice & pour above the cooked vegetables.
  17. Slowly mix it with a fork so that rice is not cut.
  18. :- U may add some biriyani masala powder too along with the masala paste if u feel that enough flavour is not there.
