Fried Brinjal Masala

In this fried brinjal masala recipe, marinated eggplants are deep fried, then cooked in tomato onion curry. Coconut gives richness to this masala curry. This is one of the best side dish for biryani and also for chapathi. Try this brinjal fry.

Instructions
  1. slice the brinjal
  2. in a bowl add brinjal, red chili powder, salt, coriander powder and turmeric powder and mix it
  3. marinate for 10 mins
  4. in a blender add red chili, tomato, coconut, fennel seed and peanut
  5. add littler water and make a fine paste
  6. in a pan heat the oil and fry the brinjal for 2 mins until it get 1/2 boiled
  7. in a same oil temper the mustard and broken urad dal
  8. add onion, salt and curry leaves and saute it for 5 mins
  9. add masala paste, mix well and allow to cook for 5 mins until the raw smell goes out
  10. add 1 glass of water to the masala and cook for 5 mins in medium flame
  11. now add friend brinjal and mix well
  12. allow to cook until the water get dry and masala mix with the brinjal
  13. now fried brinjal masala is ready, garnish with coriander leaves
