  • Chop the brinjals into small cubes.
  • Marinate the brinjal cubes with the ingredients for marination: red chili powder, salt, coriander powder and turmeric powder. Mix well with a few drops of water.
  • Marinate for 10 mins
  • Meanwhile in a blender add red chilli, grated coconut, fennel seeds and peanuts. Blend it roughly and do not crush it too much lest you lose the crunchiness of peanuts.
  • In a pan heat oil and fry the brinjal pieces for 2 mins until it get 1/2 boiled. Remove brinjal pieces from pan.
  • In a same oil temper the mustard seeds and broken urad dal.
  • Add chopped onion, salt and curry leaves and saute for 5 mins.
  • Add the ground masala mixture, mix well and allow to cook for 5 mins until the raw smell goes off.
  • Now add the fried brinjal pieces and saute well for a few minutes.
  • Allow to cook until the water gets dry and masala blends well with the brinjal pieces.
  • Now Fried Brinjal Masala is ready, garnish with coriander leaves.
