Cut the brinjal into thick round pieces and smear the ground masala paste on both sides. Keep the brinjal pieces aside for a few minutes.
Meanwhile extract the first and second coconutmilk by adding some water and running in a mixer.
Heat oil in a pan and fry the brinjal pieces until golden brown in color. Remove the brinjal pieces from oil and keep the fried oil aside to settle down.
Pour the second extraction of coconutmilk and when it boils, add fried brinjal pieces.
After a few seconds add the first thick extraction of coconutmilk and tamarind. Add required salt and remove the vessel from fire before boiling starts.
Fried brinjal with coconut, a yummy nutritious dish is ready. Serve hot.
