Fried Spinach Potato Spinach(Paalak) and potatoes fry with coconut 4 nos Potatoes (red/white)(chopped into 1/2" pieces, large)Spinach (chopped coarsely, Paalak/Cheera)1/2 tsp Cumin seeds (Jeerakam)2 nos Garlic pods (thinly sliced)2 nos Onions (finely chopped, medium)3 nos Red chillies1/4 tsp Red chilly powder (optional)5 tbsp Oil for frying5 nos Green chillies (Thai)1/2 tsp Turmeric powderSalt (As reqd)1/2 of Fresh coconut (grated)or5 - Dry grated coconut Heat oil in a medium non-stick pan.Add cumin seeds and garlic and fry lightly, until the garlic starts changing color.Add onions and red chillies and fry, till translucent. Add turmeric powder, chilly powder and salt to taste. Add potatoes and green chillies.Cover and cook on medium low heat.:- Do not add water.Keep stirring the potato mixture in between, until thoroughly cooked. Add the spinach and mix lightly, until wilted. Add the coconut and mix well, until the mixture is dry. :- Serve with rice. Kerala
