Fried Spinach Potato

Spinach(Paalak) and potatoes fry with coconut

Ingredients
  

  • 4 nos Potatoes red/white)(chopped into 1/2" pieces, large
  • Spinach chopped coarsely, Paalak/Cheera
  • 1/2 tsp Cumin seeds Jeerakam
  • 2 nos Garlic pods thinly sliced
  • 2 nos Onions finely chopped, medium
  • 3 nos Red chillies
  • 1/4 tsp Red chilly powder optional
  • 5 tbsp Oil for frying
  • 5 nos Green chillies Thai
  • 1/2 tsp Turmeric powder
  • Salt As reqd
  • 1/2 of Fresh coconut grated
  • or
  • 5 - Dry grated coconut

Instructions
 

  • Heat oil in a medium non-stick pan.
  • Add cumin seeds and garlic and fry lightly, until the garlic starts changing color.
  • Add onions and red chillies and fry, till translucent.
  • Add turmeric powder, chilly powder and salt to taste.
  • Add potatoes and green chillies.
  • Cover and cook on medium low heat.
  • :- Do not add water.
  • Keep stirring the potato mixture in between, until thoroughly cooked.
  • Add the spinach and mix lightly, until wilted.
  • Add the coconut and mix well, until the mixture is dry.
  • :- Serve with rice.

    thanks for the recipe.you can try jackfruit seed(chacka kuru) or beans instead of potato.

    Chop potato finely and cook with the ingredients.Good recipe
