Ingredients
  • Pineapple(cup cut into cubes) - 1 no
  • Green Mango/semi ripe mango(peeled and cubed) - 1 cup
  • Jicama/Sengkuang/Chinese nashi pears(diced) - 1 cup
  • Cucumber(diced) - 1 cup
  • Green apple(diced) - 1 cup
  • Papaya(peeled and diced) - 1 cup
Sauce ingredients:
  • Anchovies stock(dissolve with a bit of water, optional) - 1 cube
  • Roasted shrimp paste(this is salty so adjust to your taste) - 1 tap
  • Thick soy sauce - 2 1/2 tbsp
  • Sugar/brown sugar - 1 1/2 cup
  • Palm sugar/gula melaka - 250 g
  • Red chilies - 2 nos
  • Tamarind juice - 2 tbsp
  • Calamansi or normal lime juice - 2 tbsp
  • Roasted groundnuts(ground to a paste) - 1/2 cup
  • Fried plain flour(Maida) - 1 1/4 cups
  • Sesame seeds(roasted, Ellu) - 1 tbsp

Instructions
  1. Pound red chilies and roasted shrimp paste. Keep this aside.
  2. In low heat, mix 1 cup water with palm sugar.
  3. Cook until palm sugar melts.
  4. Add sugar/brown sugar. Once the syrup thickens slightly, turn off fire.
  5. Slowly add palm sugar syrup into the fried plain flour. Stir quickly until the syrup is mixed well with the flour. Sieve the mixture.
  6. Add soy sauce, pounded chilly and shrimp paste, ground peanuts, tamarind juice, lime juice, anchovies mixture and required salt. Give a good stir and finally add sesame seeds. Stir again.
  7. Before serving, take a bowl, add cut fruits and vegetables, add the sauce and give it a stir so that the sauce is well combined with all the ingredients. Garnish with a generous amount of coarsely pounded peanuts or roasted groundnuts. Chill before serving.
  8. Note: 1)If the rojak turns out to be salty add more palm sugar and toss.
  9. Ready made sauce rojak is available in the market.
