  • Carrots - 1 lb
  • Milk - 1 cup
  • Sugar - 1 cup
  • Ghee - 3 tsp
  • Cashew nuts for garnishing -
  • Raisins(Onakka munthiri) for garnishing -

Instructions
  1. Peel the carrots and grate them.
  2. Soak the grated carrots in the milk and pressure cook.
  3. Heat sugar and ghee in a non stick pan.
  4. Add the pressure cooked carrots and milk. Stir well.
  5. Keep the lid closed in between stirrings, as there maybe some splashes, when the milk and ghee boil together.
  6. When the milk condenses and the halwa begins to thicken, remove from flame.
  7. Garnish with cashews and raisins roasted in ghee.
  8. Alternate method: 1)Chop carrots into small cubes and pressure cook in milk.
  9. Grind this pressure cooked carrots(with milk) into a smooth paste.
  10. Proceed like the first method from step 3 onwards.

It was a real simple recipe. I tried it out for the first time and my husband really enjoyed it, though he had never had a sweet tooth. In addtion to it, you can place the carrot halwa in an ice cream cup, first place a thick layer of the carrot halwa and then top it with a sccop of Rum and Raisin Ice cream from Baskin Robbins. It tastes simply good. It gives it a real rich taste and can be served for special occasions, just to indulge yourself into something rich.

I tried this and my whole family enjoyed it. Delicious recipe.
I added cardamom also when i pressure cook the carrots as mentioned above.
There are some splashes, when the milk and ghee boil together which made by kitchen little dirty, but the halwa was yummeeee…!!!

This was the first time i ever prepared carrot halwa and it came out exceptionally good! i have heard of people adding kyoya n condensed milk to enchance flavour but your recipe was perfect even without these things.my husband loved it. thanks for sharing this recipe. kudos to you!

It was Yummy!!!!!!! There was a cook out and i introduced it to my American friends…….. They loved it…..I blended the cooked-grated carrots inthe blender…..i feel thats more better …….My husband who doesn`t like carrots too loved it…….Thank you…. and keep up the good work and do keep putting up more new receipes……

this is too good….

there is another version of it….grate the carrots and fry it in ghee-5 or 6 tbsp….till u feel the fresh smell of carrots is gone…boil milk and sugar…till milk reduces to half….add the milk to the carrots…cook it till ghee comes out…..can add cashew or saffron to this…..u will get a good crispy texture….
