Goan Sannas
Rice is ground with
toddy
and allowed to ferment before steaming in idli moulds

Toddy
Salt
As reqd
Sugar
As reqd
Instructions
First wash and soak rice overnight.
Grind rice with
toddy
(as required) to a fine batter.
Grind grated
coconut
and add to rice batter. Add 2 tbsp of
sugar
and some
salt
.
Cover and keep in a warm place for about 3 hours until the batter becomes double the quantity.
Pour the batter into saucers or idli moulds and steam for 20 minutes.
A typical Goan sannas, soft and fluffy in nature, is ready.
