  • Cucumber(peeled and chopped) - 1 no
  • Carrot(grated) - 1/2 cup
  • Beetroot(grated) - 1/2 cup
  • Mustard seeds - 1/4 tsp
  • Asafoetida(A pinch, Kayam) -
  • Coriander leaves(chopped) - 1 tbsp
  • Coconut(grated) - 1 tbsp
  • Yogurt - 1 cup
  • Lemon juice - 1/2 tsp
  • Ghee - 1/2 tsp
  • Curry leaves - 1 sprig

Instructions
  1. For preparing healthy cucumber salad, combine together lemon juice, coriander leaves, carrot, beetroot, cucumber, yogurt and salt. Add soaked and boiled moong dal.
  2. Melt ghee in a pan and add mustard seeds and curry leaves.
  3. Pour this into the cucumber mixture and garnish with grated coconut.
  4. Healthy cucumber salad is ready.
