  • Olive oil : 1 tsp -
  • Finely chopped large onion : 1 no -
  • Minced garlic : 2 - 3 cloves
  • Maggi vegetable stock cubes : 2 pkt -
  • Water : 1 cup -
  • Sugar : ½ tsp -
  • Salt to taste -
  • Freshly ground black pepper : few -

  • Finely chopped large onion : 1 no -
  • Minced garlic : 2 - 3 cloves
  • Maggi vegetable stock cubes : 2 pkt -
  • Water : 1 cup -
  • Sugar : ½ tsp -
  • Salt to taste -
  • Freshly ground black pepper : few -

Instructions
  1. Heat olive oil in a heavy bottomed pan.
  2. Add the minced garlic and sauté for one minute. Add the finely chopped onions and fry till onions are pink in color.
  3. Add the chopped spinach, salt and sugar.
  4. Cook in the pan without the lid for 4 - 5 minutes till the spinach has wilted.
  5. Boil 1 cup water and add the maggi stock cubes to make a stock. Add the stock to the cooked spinach.
  6. When the spinach mixture has cooled down, grind it in a food processor or mixer to make a smooth puree.
  7. Sieve the puree through a strainer and bring to a boil before serving.
  8. Garnish with freshly ground black pepper and fresh cream (optional).
