Healthy Spinach Soup

Ingredients

Finely chopped
spinach
: 2 bunches
Olive
oil
: 1 tsp
Finely chopped large
onion
: 1 no
3
cloves
Minced
garlic
: 2
Maggi vegetable stock cubes : 2 pkt
Water
: 1 cup
Sugar
: ½ tsp
Salt
: to taste
Freshly ground black pepper : few
Instructions
Heat olive
oil
in a heavy bottomed pan.
Add the minced
garlic
and sauté for one minute. Add the finely chopped onions and fry till onions are pink in color.
Add the chopped
spinach
,
salt
and
sugar
.
Cook in the pan without the lid for 4 - 5 minutes till the
spinach
has wilted.
Boil 1 cup
water
and add the maggi stock cubes to make a stock. Add the stock to the cooked
spinach
.
When the
spinach
mixture has cooled down, grind it in a food processor or mixer to make a smooth puree.
Sieve the puree through a strainer and bring to a boil before serving.
Garnish with freshly ground black pepper and fresh
cream
(optional).
