  • Vinegar - 1 tbsp
  • Water - 10 cups
  • Oil - 3 tbsp

Instructions
  1. For preparing healthy vegetable noodles, boil water, add noodles and salt. Cook uncovered for couple of minutes till the noodles are soft and firm but not mushy.
  2. Drain and wash with cold water. Add a little bit of oil to avoid the noodles from sticking.
  3. Heat two tablespoons of oil in a vessel, add chopped ginger, garlic and stir-fry. 4)Add sliced onion and saute until it turns translucent.
  4. Add carrot, beans, cabbage, cauliflower florets and capsicum. Stir-fry for two minutes or until the vegetables are cooked but still retain the crispness.
  5. Then add pepper powder, ajinomoto, salt and sugar. Stir in the chilly sauce and the vinegar.
  6. Stir in the noodles and fry for few minutes.
  7. Healthy vegetable noodles is ready. Serve hot with chilly sauce and tomato sauce.
