Hot And Sweet Egg Curry Naadan Kerala mutta curry 4 nos Eggs (boiled and each halved)1/2 tbsp Mustard seeds3 tbsp Oil2 stems Curry leaves1/4 tsp Turmeric powder2 tbsp Coriander powder1 tbsp Red chilly powder3/4 tbsp Sugar1/2 tbsp Fenugreek (Uluva)1 no Onion (chopped, big)2 nos Tomato (chopped)2 nos Green chillies (slit)6 nos Garlic pods (chopped)1/2 tbsp VinegarSalt (As reqd)4 cups Water Heat oil in a pan.Splutter mustard seeds.Add onion and saute till it becomes slight brown.Add tomato, garlic and green chillies and saute for 5 mins.Add coriander powder and saute for 1 min.Add red chilly powder and fenugreek.Add enough water (4 cups).Add curry leaves, sugar and vinegar.Add salt and boil it for 8 - 10 mins.Add boiled eggs.Boil the eggs in the curry for 2 mins.:- Serves best with chappatis and appams and not with rice.
