Ingredients: 4 nos Eggs (boiled and each halved); 1/2 tbsp Mustard seeds; 3 tbsp Oil; 2 stems Curry leaves; 1/4 tsp Turmeric powder; 2 tbsp Coriander powder; 1 tbsp Red chilly powder; 3/4 tbsp Sugar; 1/2 tbsp Fenugreek (Uluva); 1 no Onion (chopped, big); 2 nos Tomato (chopped); 2 nos Green chillies (slit); 6 nos Garlic pods (chopped); 1/2 tbsp Vinegar; Salt (As reqd); 4 cups Water

Ingredients

4 nos Eggs boiled and each halved
1/2 tbsp Mustard seeds
3 tbsp Oil
2 stems Curry leaves
1/4 tsp Turmeric powder
2 tbsp Coriander powder
1 tbsp Red chilly powder
3/4 tbsp Sugar
1/2 tbsp Fenugreek Uluva
1 no Onion chopped, big
2 nos Tomato chopped
2 nos Green chillies slit
6 nos Garlic pods chopped
1/2 tbsp Vinegar
Salt As reqd
4 cups Water

Instructions

Heat oil in a pan.
Splutter mustard seeds.
Add onion and saute till it becomes slight brown.
Add tomato, garlic and green chillies and saute for 5 mins.
Add coriander powder and saute for 1 min.
Add red chilly powder and fenugreek.
Add enough water (4 cups).
Add curry leaves, sugar and vinegar.
Add salt and boil it for 8 - 10 mins.
Add boiled eggs.
Boil the eggs in the curry for 2 mins.
:- Serves best with chappatis and appams and not with rice.
