  • Basmati rice - 500 gm
  • Mutton(cut into small pieces) - 1 kg
  • Garam masala - 2 tsp
  • Red chilles - 6 nos
  • Cashewnuts(A handful) -
  • Onion(sliced and fried crisp, big) - 5 nos
  • Cloves(Grambu) - 2 nos
  • Cinnamon(Karugapatta) - 2 pieces
  • Cardamom(Elakka) - 3 nos
  • Green chillies - 6 nos
  • Coriander leaves(A small bunch, chopped) -
  • Mint leaves(chopped)(A small bunch, Pudhina) -
  • Ginger(garlic paste - 3 tsp) -
  • Beaten curds - 1 cup
  • Juice of 2 limes -
  • Saffron(dissolved in 3/4 cup milk) - 2 pinch
  • Ghee or Refined oil - 5 tsp
  • Boiled eggs for garnishing - 4 nos

Instructions
  1. Grind together red chilles and cashewnuts to a fine paste.
  2. Marinate the mutton with ginger-garlic paste and the beaten curd. Set aside.
  3. Heat 4 tbsp of ghee in a pan.
  4. Fry the red chilly masala.
  5. Add the marinated mutton, 1/4 of the fried onion, 1 tsp of garam masala and salt to taste.
  6. Keep frying till the ghee separates.
  7. Add 1 1/2 cups of warm water and pressure cook till tender.
  8. Heat 1 tsp of ghee in a vessel.
  9. Fry the spices.
  10. Add the rice and fry a little.
  11. Add the green chilles and salt.
  12. Add enough warm water.
  13. Cook till rice is half done.
  14. Remove and spread on a thali, discarding the masala.
  15. Mix together the chopped coriander, mint leaves, garam masala and fried onions. Set aside.
  16. To assemble:- Take a heavy bottomed vessel and line it with ghee.
  17. Spread a layer of rice followed by a layer of mutton.
  18. Sprinlke half of pudina mixture and juice of 1 lime.
  19. Again spread a layer of rice followed by mutton and finish with rice layer.
  20. Sprinkle the rice with safron milk and dot with ghee.
  21. Cover Mutton Biryani tightly and place over a griddle for dum for 20 mins.
  22. Garnish Mutton Biryani with eggs cut in halves.
  23. :- Serve hot Mutton Biryani (Biriyani) with raita or salad.
