  • Clean and wash Irumban Puli. Cut the Bilimbi in round shapes and keep them separately.

  • Transfer the Irumban puli pieces into a pressure cooker. Add Jaggery and one cup of water. Close the cooker and cook in medium flame. After 2 – 3 whistles put off the stove and keep aside.
  • Heat coconut oil in a pan. Splutter mustard seeds and add fenugreek powder, green chilli, ginger pieces, curry leaves and stir it well.

  • When the colour of the ingredients turn into golden brown, add the cooked Irumban puli mix along with chilli powder and required quantity of salt. Stir the mix well and boil it for some more time in low flame.

  • After some time, when this mix turns into a thick form, put off the stove. Add 2 – 3 tsp of sugar and stir it well. Irumban Puli(Bilimbi) Inji is ready. Puli Inji can be served with rice/wheat porridge, cooked rice etc.
